Healthy Vegan Pumpkin Spice Latte


It's that time of year again! The leaves are just starting to turn colors here in central Washington and many of us are talking about how we can't wait to wear our sweaters and boots (without regretting it midday when we nearly die of heat-stroke) and go to pumpkin patches and sip warm beverages on frosty mornings...but slow down you pumpkin-latte-chugging mama! Don't let the season of all-things-pumpkin pass you by before you try this recipe! Enter, the healthy vegan pumpkin spice latte. Getting to enjoy a delicious homemade latte in my pj's—it just doesn't get much better than that!

Healthy Vegan Pumpkin Spice Latte Recipe

1.5 cups very hot coffee (coffee that has been rewarmed for the 10th time is still acceptable, consider heating the pumpkin puree in your coffee before blending to keep it from cooling your latte too much!)

1/4 cup of pumpkin puree (homemade using sugar/pie pumpkins is best but canned will do in a pinch!)

1 teaspoon pumpkin spice blend (see below)

small handful of cashews (6 or so)

1 Tablespoon of Maple Syrup or two pitted dates (sweeten to taste with preferred sweetener)

1 Tablespoon coconut oil (optional but delicious)

Add all ingredients to your high-speed blender and crank that baby up to high until you see it morph into a frothy steamy latte. Visualize your hard-earned cash slipping back into your wallet. Yet another easy and delicious homemade recipe for the win. Sip. Enjoy.

DIY Pumpkin Spice Blend  (makes about 4 Tablespoons)


2 Tablespoons Cinnamon

1 Tablespoon Ginger

1 teaspoon ground Cloves

1 teaspoon ground Allspice

1 teaspoon grated Nutmeg (fresh is best if you've got it!)

1/4 teaspoon of Cardamom (or substitute Mace)

Mix all spices together until there aren't any lumps and store in an old spice jar. Label it—you don't want this one getting shoved to the back of the cupboard at this time of year! ;-D
